Hilton Deeth grew up on a dairy farm in Australia and has a science degree and a PhD in chemistry from the University of Queensland. He has had a long involvement with dairy research involving milk and a range of dairy products. Particular interests include milk lipids and lipolysis, milk proteins and proteolysis, and thermal and non-thermal technologies. After working in food research in the Queensland Government, he joined the University of Queensland in 1995. There he taught food science and technology and supervised several postgraduate students and research projects. From1996 to 2008 he was Director of the Centre for UHT Processing at the University of Queensland. He has published over 160 research papers and 40 book chapters. He co-authored the 2017 book on “High Temperature Processing of Milk and Milk Products” and co-edited the 2018 book on “Whey Proteins. From Milk to Medicine”. He is now Emeritus Professor of Food Science at the University of Queensland and consults to the dairy industry.

Jianbo Xiao is current a professor of University of Vigo (Spain). He received PhD degree in nutrition from Okayama Prefectural University (Japan) in 2009. He worked as a Postdoc supported by AvH foundation at University of Würzbug, Germany (April 2013-May 2015) and then worked as an assistant professor in University of Macau (October 2015-December 2020). Dr. Xiao has been selected as Clarivate Analytics Highly Cited Researchers (2016, 2017, 2019, 2020 and 2021). His research is focusing on foodchemistry and nutrition. He has accepted and published more than 300 peer reviewed papers including Nature Reviews Drug Discovery, Seminars in Cancer Biology, Biotechnology Advances, Trends in Food Science & Technology, Critical Reviews in Food Science and Nutrition, ActaPharmaceuticaSinica B, Journal of Advanced Research, Food Chemistry, Molecular Nutrition and Food Research, and so on (Scopus citation: 10800, H-index 55; Google citation: 14500, H-index 62). He also works as the chairman to organize ISPMF2015, 2-ISPMF (2017), 3-ISPMF (2018), and 4-ISPMF (2020). Prof. Tamara B. Popović is a Research Associate Professor at the Institute for Medical Research University of Belgrade (2000-present). She mentored in two PhD thesis several master theses and BSc studies and published more than 100 articles. She has given over 20invited/keynote presentations through the world. She is member of several national and international societies concerning her research area. She is owner of patent in the research field of food in her country which is great achieve. She is member of some Editorial boards in scientific journals. During the career she participate in 5 national and several International projects and lead several working packeges. Professor Popović field of interest are lipids, metabolism and fatty acids of membrane phospholipids in plasma and tissues. She investigated with her team effect of bioactive supstances in animal models, human interventional studies, and analyze bioactive substances and its effects on lipid metabolism and redox status. Professor Popović collaborate with clinics, laboratories and pharmaceutical companies in her country.

Zhiqian Liu obtained his BSc (Agronomy) in China and DEA and PhD (Plant Physiology) in France. He then worked in China Agricultural University, New Zealand Forest Research Institute and INRA of France for a total of 15 years as associate professor, research scientist and research fellow respectively, undertaking research in multiple fields including plant biochemistry, pesticide science and molecular genetics. Since 2006 he has joined Agriculture Victoria Research, Australia as a senior research scientist where his research focuses on metabolomics and lipidomics and their applications in various disciplines. He has conducted intensive research on dairy lipidomics for over 10 years and published over 40 research papers in milk lipid characterisation and two invited reviews in “Progress in Lipid Research”and “Current Opinion in Food Science”. Currently, he is a member of the editorial board for several journals relating to food chemistry and analytical chemistry, as well as a peer reviewer for over 20 journals.

Dr. Hagai Cohen obtained his Ph.D. in Plant Molecular Biology in the Faculty of Biology at the Technion – Israel Institute of Technology, Israel, investigating the regulatory metabolic pathways involved in amino acid biosynthesis in plant seeds. It is then where he started to focus on metabolism in plants. During his Postdoctoral Fellowship at the Weizmann Institute of Science, Israel, he investigated the metabolic pathways leading to the formation of lipophilic barriers in plants such as epicuticular waxes, cutin, suberin and lignin. In early 2020, he opened his independent laboratory as a Principal Investigator in the Department of Vegetable and Field Crops, the Institute of Plant science at the Agricultural Research Organization (ARO), Volcani Institute, Israel. His group is interested in elucidating various aspects of interactions between plant surfaces and pathogens, with a particular focus on metabolic networks operating on the course of pathogenic attack and invasion.

Atsushi Takeda, Ph.D., a professor at Department of Neurophysiology, School of Pharmaceutical Sciences, University of Shizuoka from 2012 (Professor emeritus, present) is an expert on zinc neuro-signaling. His research focuses on not only functional Zn 2+ signaling on cognitive performance but also toxic Zn 2+ signaling in Alzheimer’s disease and Parkinson’s disease. The recent original topic is preventive effects of various natural compounds from foods and plants on neurodegeneration. He has mentored over 100 students, graduate students, and postdocs. He has published more than 200 research articles. He has given many invited/keynote presentations throughout the world. Dr. Takeda has received awards such as Japanese Society of Award for Trace Elements (1997) and The Pharmaceutical Society of Japan Award for Divisional Scientific Promotions (2004).

Dr. Tayana Silva de Carvalho Grosserichter is a Postdoc at Heart and Diabetes Center in North Rhine- Westphalia (Germany) and a guest professor in neuronutrition and food disorders at the University Center of Pará (Brazil). With more than one decade dedicated to science, Tayana´s research focuses on the role of diet style or diet compounds on neurodegenerative and vascular disease development. These were the topics of her master's and doctoral thesis, the discipline she teaches to postgraduate students, and her current project. Notably, about her Postdoc, she is developing a project related to diabetic cardiomyopathy, looking for new experimental models that mimic this disease, in a renewed institute in Germany. Her scientific projects were published in international journals, conference papers, and Brazilian magazines. Tayana also reviews articles in different journals, has attended several international and national conferences, and organized a few scientific meetings and conferences in Germany and Brazil. She successfully has linked nutrition to different areas, being a challenge that she is taking in every project in which she is involved.
