Dr. Youling L. Xiong, a food science professor at the University of Kentucky, USA (1990-present), is an expert onprotein chemistry, functionality, and applications. His research focuses on the interaction of proteins with various natural food compounds (phenolic antioxidants, lipids, minerals, polysaccharides, etc.) for healthy food production. He has mentored over 70 graduate students and postdocs and published more than 300 research articles. He has given over 140 invited/keynote presentations throughout the world.As a career achiever, Dr. Xiong has received numerous national and international awards, notably the Young Scientist Award (American Chemical Society), Distinguished Research Award (American Meat Science Association), Lectureship Award (IFT Food Chemistry Division), Bertebos Prize (Royal Swedish Academy of Agriculture and Forestry), and University Research Professorship Award. Dr. Yehuda Shoenfeld is the founder and head of the Zabludowicz Center for Autoimmune Diseases, at the Sheba Medical Center which is affiliated to the Sackler Faculty of Medicine in Tel-Aviv University, in Israel. Dr. Shoenfeld is the Incumbent of the Laura Schwarz-Kipp Chair for Research of Autoimmune Diseases at the Tel-Aviv University. His clinical and scientific works focus on autoimmune and rheumatic diseases, and he has published more than 1700 papers in journals such as New Eng J Med, Nature, Lancet, Proc Nat Acad Scie, J Clin Invest, J Immunol, Blood, FASEB, J Exp Med, Circulation, Cancer and others. His articles have had over 31,000 citations. He has written more than three hundred and fifty chapters in books, and has authored and edited 25 books, some of which became cornerstones in science and clinical practice, such as "The Mosaic of Autoimmunity", "Infections and Autoimmunity" and the textbook "Autoantibodies" and "Diagnostic criteria of autoimmune diseases", all of which were published by Elsevier and sold by the thousands. Chee Kong Yap is working as a full professor in Universiti Putra Malaysia (UPM) since 2021. Supervised/co-supervised 11 PhD/ 30MsD thesis, 10 PosDoc fellows and received several awards and/or honors. Her research work has been focused on food science from different perspectives, in order to deepen the knowledge on food composition and predict foods' possible health impacts. Major areas of research during the last years include, the improvement of food quality, fight food adulteration, control additives and chemical contaminants, test the impact of food beneficial and harmful compounds in the context of a whole diet pattern, applying in vitro models using cells of human origin and promote sustainable foods with enhanced health and sensorial properties. Dr Bassirou Ndoye holds a PhD in Agronomics and Bioengineering with a specialization in Food Sciences & Technology at Gembloux AgroBioTech, University of Liège, Belgium, 2007 under theProf. PhillipeThonart ‘s direction. After his PhD thesis, he was subsequently recruited as a Research Assistant at GemblouxAgroBioTech, University of Liege, in abiorefinery project through the fermentation of sugar beets with yeast. He subsequently undertook3-year postdoctoral research from 2009 to 2011 at Laval University in Canada to study thegenomics of cheesemicrobial ecosystem. He then joined the Canadian Ministry ofAgriculture and Agri-Food at the Lacombe Research Center in Alberta from 2011 to2014 as a visiting scientist under the Dr Colin Gill’s supervision.Dr. NDOYE finally joined the University El Hadji IbrahimaNiass(USSEIN), inSenegal since February 2019 as Assistant Professor and head of the department of food science and technology. Dr Ndoye was awarded the Belgian development cooperation international prize in 2008 for his PhD thesis and carries around 10 peer-reviewed articles and book chapters.

Marilia Duque is a research fellow at University College London. She has a PhD in Communication and Consumption (ESPM/Sao Paulo) with research on the impacts of smartphones on Health and Ageing. She is the author of the protocols "WhatsApp for Nutritionists" an open-access manual on how to use WhatsApp as a visual food journal and as a food assessment method. These protocols were validated in a partnership with UNIFESP Medical School in Sao Paulo. Dr. Haleama Al Sabbah is Associate Professor and Chair of Health Sciences Department at Zayed University in UAE. She completed her PhD in Public Health Nutrition (PhD in Medical Sciences) in 2008 from the Faculty of Medicine, Gent University, Belgium. She awarded a doctoral scholarship from Belgian Technical Cooperation (BTC). Her PhD study was part of the National Study of the Palestinian Health Behaviors in School-aged Children (HBSC-2004). Dr. Justyna Żulewska has been employed at University of Warmia and Mazury in Olsztyn, Poland, since 2006 as Professor of Food Science. She received her B.Sc. and M.Sc. degrees from Olsztyn Academy of Agriculture and Technology, Poland. Her doctorate was received in 2004 from University of Warmia and Mazury in Olsztyn, Poland with her dissertation in the area of functional properties of whey proteins. Nowadays, she is acting as Head of Department of Dairy Science and Quality Management. Adriana Lobacz (PhD) is Assistant Professor of Food Technology and Nutrition (specialization in dairy technology) at the University of Warmia and Mazury in Olsztyn. Her research interest is in microbiological safety of dairy products, new dairy products development, predictive microbiology, application and influence of innovative additives on dairy products safety, antimicrobial properties of substances of plant origin, safety of dairy products produced from raw milk. She teaches several courses, i.e. new food product development, predictive microbiology, statistical process control. Dr. Lidia Stoyanova graduated the Biological Faculty of M.V. Lomonosov Moscow State University (MSU). Stoyanova earned Ph.D degree in Microbiology Science after post-graduate education. The topic of the dissertation was “The fermetation of egg white by propionic bacteria”. In 1983 she conferd the rank of Senior Reseacher by speciality Microbiology. She is currently working as a Leading Scientist of the Department of Microbiology. The topic of her doctoral dissertation was “The novel bacteriocins and their applications”. She confered the rank of Doctor degree on Microbiology and Biotechnology speciality in 2008. She had carried out investigations directed to isolation and construction of bacteriocine producing lactic acid bacteria with probiotics properties. L. Stoyanova has more 200 articles, 12 books, 105 oral presentations in conferences and International Symposiums, 9 media presentations, 11 patents, memberships in a scientific society, program committees and membership in a dissertation council. She is a full member of the Russian Academy of Food Security, a member of the Microbiological Society. She headed the laboratory of microbiology "Certification Center Prodex" for food products. The circle of interests is the quality and safety of products, the development of manufacturers of bacteriocins as biopreservatives, probiotics, prebiotics (food additives) to increase the shelf life of products and increase their biological and nutritional value, as well as extensive experience in food safety and food industry, with more than 30 years of teaching experience. She lectured in India: University of Delhi, the Institute of Antibiotics in Pune, Institute of Biochemistry and Microbiology in Chandigarh, lectures on bacteriocins produced by the lactobacillus bacterium in China, Kazakhstan. She directed 32 undergraduates and specialists who received training from the International Center for Biotechnology at the Moscow State University, not only from Russia, but also from Iran, Bangladesh, Ethiopia, China. She also acted as an internal or external examiner for several doctoral dissertations. As an expert on food safety, she participates in independent audits with a certification authority. She has participated in several regional and international meetings, giving presentations on high-pressure processing and food safety, serves as a reviewer for the Journal of Food Biotechnology, the International Journal of Applied Microbiology and Research in Biotechnology (IJAMBR), Microbiology Research Internationa, Folia Microbiologica ets, presented a report at international conferences on food security as a report and the head of the section. The work was focused on identifying key competences in the field of food safety that a graduate should receive in order to be able to better integrate into the labor market. Mrs. Alina Drozdowska, PhD student, is a Nutrition and Sports Scientist at the Research Department of Child Nutrition, Ruhr University Bochum, Germany, (2017-present). She started her professional path in 2003 as a university-certified fitness trainer and supported people to lead a healthy lifestyle. She was a member of the Federal Association of German Personal Trainers e.V. She spent her first year of research in 2015 in the field of human nutrition and investigated the nutritional behaviour of pregnant women as part of the PRINCE study (Prenatal Identification of Children’s Health)at the University Medical Center Hamburg-Eppendorf (UKE). Her current research focuses on studying children's cognitive performance in the school environment, as well as nutrition and physical activity. In this context, she was able to investigate the importance of drinking water at school and the physical fitness of school children for cognitive performance.

Ana Rita Henriques (DVM, MSc, PhD) is an invited lecturer of Veterinary Public Health and Food Technology at the Faculty of Veterinary Medicine, University of Lisbon. She also works as a food safety consultant and auditor in several food companies. She has published several peer-reviewed papers and oral and poster communications in scientific meetings and conferences on topics related to Food Safety and Food Microbiology and is currently interested in developing research using risk-benefit assessment in foods.

Sidi is a scientific explorer of spices at the University of Ghent, Belgium. His research aims to help farmers develop their capacities and capital in the future. His study of sustainable harvesting of cinnamon became an Indonesian National Standard published in August 2020. He had established two platforms to engage with the prior stakeholders of Indonesian spices development. At first is the CinnamonTalk, an online discussion cross-discipline to endeavor Indonesian interest of global spice market. The second initiative is Spice Hub Indonesia, a social movement and interaction with the prior community to enrich their capacities of sustainable production of spices. He is also the founder of a small entrepreneurial business named ‘Spice Land Indonesia’, to find common interest from spice companies in Europe to link with smallholder farmers of spices in Indonesia Before his doctoral studies focused on applied research to action approach, he was a senior manager of CSR at a heavy manufacturing company, which further allowed him to add value to some international bodies and Indonesian government institutions through external consultancy. He was also asked a visiting lecture in some universities in Indonesia since 2013 on topics related to Sustainability and CSR.

Dr. Lea Pogačnik, a professor of Chemistry, Food Analytical Chemistry and Biochemistry at University of Ljubljana, Biotechnical Faculty (2000-present), Slovenia, is an expert on preparation of extracts from different natural sources as well as their chemical and biological characterization.She has mentored over 60 graduate students and published more than 30 research articles. Isabel Mafra graduated in Food Engineering from the Portuguese Catholic University in Porto, completed a Master degree in Biological Engineering from the University of Minho and a PhD degree in Chemistry from the University of Aveiro. She is a Senior Researcher at LAQV/REQUIMTE, Faculty of Pharmacy, University of Porto. Her research is focused on molecular biology applied to food authentication, food allergen analysis/characterisation and GMO detection, with strong expertise in the development of DNA-based methods, including DNA extraction from complex food matrices, PCR, real-time PCR, HRM analysis, sequencing, among others. She has also expertise in food chemistry and food technology/biotechnology. She has participated in several national and international research projects and published over 100 papers in index journals (H-index of 29).

Dr. Elisaldo Mendes Cordeiro recently defended his PhD theses (2019) at the Federal University of Rio de Janeiro-UFRJ, where he completed his master's and PhD. In his master's degree, he studied obesity, using a high-fat diet and physical activities as modulators of changes in the central nervous system, for this purpose, he studied the hypothalamus in experimental studies. I graduated from the University of Baghdad in 1973 with a First Class Honours, Bachelor of Science (BSc). I spent the next 5 years as assistant lecturer at the University of Baghdad. Thanks to scholarships from the Ministry of Research and Education, the National Institute for Agricultural Research and finally the Medical Research Foundation, I made my postgraduate education that allowed me to get a Master of Science (MSc) and then Doctor of Philosophy (PhD) from the University of Rennes, France. I worked as a senior scientist at the Department of Animal Physiology and Livestock Systems of the French National Institute for Agricultural Research. I lead research on antioxidants, nutrition, and phytotherapy. I have engaged in the development and use of experimental surgery and preclinical animal models of animal and human diseases. I was involved in the development of the Fibered Confocal Fluorescence Microscopy (Cell-Vizio) for in vivo imaging of tissues and organs. She did her industry attachment at the Malaysian Productivity Corporation (MPC) on a Circular Economy project. Dr. Avishek Biswas is a Principal Scientist in ICAR- Central Avian Research Institute (CARI), India at Animal Nutrition division. He has made significant contribution in the area of mycotoxin amelioration through nutritional intervention for improvement of productive, reproductive, immune efficiency and sound gut health. Dr. Biswas developed several novel nutritional strategies, diagnostic and prophylactic modalities and least cost feed formulation with use of alternate feed resources that substantially enhanced poultry productivity (meat) many fold in high altitude region. His recent work on the identified the alternative of antibiotic growth promoters with natural growth promoters for poultry feed has been appreciated. He is recipient of several prestigious international and national and awards. He has guided 6 MVSc and 3 Ph.D students and published 85 research articles in peer reviewed international and national reputed journals. He has handled 18 research projects. Dr. Biswas has edited 20 books/proceedings, 6 teaching manuals, 12 technical bulletins, 52 book chapters, 45 extension/popular articles.

Dr. Julio Calleja-González – Ph.D., is a Chair professor in sports training at university of the Basque Country (Spain). Honorary professor at the Kinesiology Faculty in Zagreb (Croatia). As an international lecturer in more than 30 countries, he is one of the most World recognized specialists in sports recovery. Currently, he works for the Spanish Olympic Committee and is also the personal performance scientist of Serge Ibaka (NBA Champion, 2019). Former strength and conditioning coach of Spanish and Dominican Republic basketball national teams during 8 years, in European cups, American cups, World Champion and Pre-olympic events. Also, he was a member staff of the NBA global Game 2017 (Team World vs. Team Africa). Tessa Sjahriani is an undergoing postgraduate doctoral program at Universitas Airlangga, Indonesia, with the support of scholarships from the Education Fund Management Institute (LPDP), Ministry of National Finance, Indonesia(2019-present).The research focuses on natural and environmental interactions (bacteriophages, E. coli) related to food safety. Started publishing international articles since 2021, since studying at Universitas Airlangga, with a few publications at the local/national level. Prof. Yaw GyauAkyereko is Assistant Lecturer at the Department of Food and Postharvest Technology of the Koforidua Technical University, and an External Lecturer at the Kintampo College of Health and Well-Being, in the Bono East region of Ghana. He holds Master of Philosophy (M.Phil.) and Bachelor of Science (BSc.) degrees in Food Science and Technology from the Kwame Nkrumah University of Science and Technology (KNUST). He is currently pursuing his PhD degree in Food Science and Technology at KNUST. Mr. Akyereko has in-depth knowledge in Food Safety and Quality Assurance, Postharvest Management, Food Processing and Technology, Food Product Development, Research Methods, Sensory Evaluation, Food Microbiology, Food Chemistry, Traditional Foods, Crop Production, Nutrition and Health, Nutrient Metabolism, Biochemistry and Laboratory Analysis. He has participated and presented at conferences, workshops and stakeholders meetings, and has to his credit 5 peer-review publications and over 10 conference proceedings. Cumulatively, he has about 5 years teaching experience. His interest lies in social interventional researches in the areas of food safety, product development, nutritional studies and value addition to underutilized crops, with the prime aim of maximizing utilization of underutilized crops to promote food and nutrition security and job creation. Dr. Seyed Mohammad Mousavi earned her BSc and MSc in Nutritional Sciences from Tehran University of Medical Sciences. He is currently a Ph.D. candidate at Tehran University of Medical Sciences' Department of Community Nutrition (TUMS). Nutritional epidemiology and evidence-based nutrition are her primary research and teaching interests. Dr. Mousavi has received several awards and honors, such as being a top researcher of the Ibn Sina International Festival in Iran and ranking second in the Ph.D. entrance exam of Nutrition 2019. He has published more than 70 papers in peer-reviewed journals and has three books (650+ citations, h-index (Scopus=14, google scholar=17). He has focused on the relationship between gut microbiota and non-communicable diseases such as obesity, metabolic syndrome, type 2 diabetes, and others in recent years.

Her primary research and teaching interests include clinical nutrition and diet therapy in GI and liver disorders.
